Almond Basil Pesto

If you’re looking for a healthy, hearty sauce or spread, pesto is the way to go. A blend of basil leaves, olive oil, garlic, and pine nuts (or almonds, if you are me), then mixed with a handful of grated parmesan, this is a rich treat to blow your cream sauces and mayonnaises out of the water.

It’s so delicious! The fresh, earthy flavor from the basil, combined with the nutty, crunchy texture of the nuts, it’s so hard to resist. I love my pesto thick and chunky, not oily and runny like you often find. No, my pesto is thick enough to eat with a fork, yet smooth enough to spread with a knife. Yum, yum, yum.


-2/3 cup packed fresh basil (rinse and patted dry with paper towels)

-1/2 cup of olive oil

-1/2 cup+ of chopped almonds

-dash of salt

-one garlic clove, pre-minced

-handful of parmesan cheese, to taste


-food processor


1. Combine the basil, garlic, salt, and olive oil in the food processor and blend well.

2. Add the chopped almonds and pulsate more.

3. Add a handful of parmesan, and mix by hand. All done!
