Lox & Cream Cheese Bagel

As mother always told me, it’s SO important to start the day off right–with a big breakfast. After sleeping all night, our bodies are starved for nourishment, so it’s imperative to replenish our bodies with a balanced meal. If you think about it, would you go ten hours of being awake without eating? Probably not. But that’s what you do if you skip breakfast, assuming you have three hours to kill after dinner, before bed, without eating, and you sleep for seven hours. Ten hours! You definitely need to eat breakfast.

Today I joined Jeff at his work for breakfast. Lucky dog eats for free (he works at Google, so jealous). Apparently Fridays are lox and cream cheese day (in addition to the other, standard breakfast things they have available) so I had to partake.

It was so good! The perfect way to start a Friday of dissertation-writing. The lox (essentially smoked salmon) provides protein, the cream cheese some dairy and protein, and the bagel provides fiber. Add some capers, red onion, tomato, and cucumbers for veggies and you have yourself a very balanced meal. And delicious, at that.

If you’re thinking, “where can I get some good lox and cream cheese with bagels?” Don’t worry. You don’t need to be in New York and you don’t need access to a Googler. In Seattle, we have a few options.
