An Ode to Almonds
As most people know (notice my blog banner?), I love all things almond, so for my birthday tonight, Jeff surprised me with an entirely almond feast–he called the menu, “An Ode to Almonds.”
You can see from the menu he created that it was a feast including an almond, spinach salad, almond flour encrusted, pan-fried chicken, and almond ice cream for dessert.
It was such a thoughtful gesture and he planned out every detail, from the candles on the table in my favorite colors and scents, to the brand new, crisp linen napkins, and the bottle of my favorite wine, Saracco’s Moscato D’Asti.
The almond, spinach salad was so refreshing and the almonds added a nice crunch for texture. Lightly tossed in a honey, cider vinaigrette, it was delicious.
Next was the almond flour encrusted, pan-fried chicken. This chicken dish is healthier than other chicken dishes because it was boneless and skinless and the almonds make for a fiber-rich alternative to normal breading. I normally bake my chicken, but pan frying it allowed for a nice, golden crust. Slightly crunchy on the outside, and tender on the inside. Yum.
Finally, the highlight of the evening was the almond ice cream.
We call it triple almond ice cream because it has almond extract, candied almonds, and shavings of Theo‘s salted almond milk chocolate bar.
I really am a lucky girl :).
