Salmon Nicoise Salad

Nicoise salad, meaning, a salad from Nice, France, is one of the tastiest (and healthiest, I imagine) salads one can eat. Loaded with both fresh veggies as well as lean protein, this is a delicious, well-balanced meal for anyone.

I’ve been on a salmon salad binge lately, and the salmon version of this salad is amazing…perhaps one of my favorites. A hodgepodge of all things yummy, I could probably (and may very likely do so) eat this everyday.

Fresh herb-encrusted salmon topped on a pile of lettuce, crisp green beans, kalamata olives, capers, red onion slivers, hard boiled egg, roasted potato bits, and cherry tomato, yum.

Simply grill some salmon and set aside. Then boil or roast some Yukon potato slices and set aside. Prepare your lettuce and veggies and top with the salmon and potatoes. Dip forkfuls into a dijon dressing and there you have it. A simply French meal.
