Tomato, Onion and Cucumber Salad + Tuna Salad
I can’t believe it’s been so long since I’ve blogged! I’ve been super busy with packing, moving, and dissertating (my adviser said I’m almost ready to defend my proposal! Finally!), and haven’t had a chance to document my eats as much as I would like.
Now that I’m pretty much settled (though I’m going to New Orleans tomorrow for a short trip, so I guess not TOO settled), I thought I’d take a brief moment to blog about one of my current favorite lunchtime meals: tomato, red onion, cucumber salad and tuna spread on crackers.
When I was diligently trying to lose my grad school thirty, a can of light tuna in water mixed with some mustard and black pepper was my main choice of protein. Only 100 calories a can! And y’all know mustard has no calories. A win win meal. You don’t even miss the mayo.
Anyway, to spice things up today, I decided to complement the tuna with a simple salad of fresh tomatoes, cucumber, and red onion slivers tossed with olive oil, balsamic, and pepper. And to the tuna, I added some minced sweet pickle in addition to the mustard and pepper.
This is such a colorful, filling meal, you won’t even notice it’s healthy!
